Shrimp & Grits with Okra, Tomato & Peanuts.

This week at the Cooking at the Market Chef Demonstration series, Chef Brad from Croissants Bistro & Bakery cooked up an amazing shrimp & grits recipe with okra from the Farmers Market, peanuts and grape tomatoes.  The okra combined with the peanuts gave this traditional Southern dish a unique flavor.

Shrimp & Grits with Farmers Market Okra & Tomato.
Ingredients
  • Shrimp
  • Grits
  • Farmers Market Okra – cut on an angle
  • Red Onion – Julianned
  • Peanuts
  • Grape Tomatos
  • Fresh Thyme
  • Olive Oil
  • Fresh Garlic – minced and shaved
  • Shallots – finely chopped
  • Red Pepper flakes
  • White wine
  • Butter
Instructions
  1. GRITS
  2. Saute minced garlic, fresh thyme, and shallots in the Devo Olive Oil for 1 minute.
  3. Bring 4 cups of milk to a boil.
  4. Add 1 cup grits and reduce to a simmer, add salt and pepper, and stir occasionally for 20 minutes.
  5. SHRIMP, OKRA, TOMATO & PEANUTS
  6. Saute shaved garlic, red onion, okra, peanuts, shrimp, red pepper flakes and grape tomatos in Devo Olive Oil for approximately 7 minutes.
  7. Pour in white wine to taste and continue to sauté for another 5 – 8 minutes.
  8. Add 2 tablespoons of butter.
  9. Serve & enjoy!
